Ingredients
  • 2 cups sugar
  • 1 cup oil
  • 3 eggs
  • 2 cups grated zucchini
  • 1 tsp. vanilla
  • 3 cups flour
  • 1 tsp. baking soda
  • ¼ tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 cup chopped nuts
Instructions
  1. Blend sugar, oil, eggs, zucchini and vanilla.
  2. Add dry ingredients and mix well.
  3. Divide batter into prepared muffin tins, lined with paper or foil muffin cups.
  4. Bake at 350 degrees for about 20 minutes. Touch or toothpick test works.
  5. Makes 2 dozen muffins. These freeze well.
