TORTELLINI WITH HAM AND PEAS

Ingredients
  • 1 ½ Tblsp. butter or olive oil
  • ½ cup minced onion
  • 1 tsp. minced garlic
  • ½ cup chicken broth
  • 1 cup frozen baby peas thawed
  • 1 cup whipping cream
  • 1/4 tsp. pepper
  • 2 - 8 oz. packages fresh or frozen cheese tortellini
  • ½ cup chopped ham
  • a sprinkle of parsley
  • grated parmesan cheese optional
Instructions
  1. Put the tortellini on to boil.
  2. In a pan or skillet large enough to hold all the ingredients, saute onion and garlic in butter or olive oil until tender.
  3. Add broth and cook about 2 minutes.
  4. Add peas, cream, and pepper. Cook until bubbly, stirring occasionally so as not to scorch it.
  5. Add ham and let heat through while you drain the pasta.
  6. "Toss' in the hot tortellini. Top with a sprinkle of parsley and Parmesan cheese, if desired.
Terri's Notes

~ I love the pretty colored mix of tortellini and ravs, and I mix up the fillings-always one package of cheese and then one spinach or mushroom.
~ A handful of shredded carrot adds nice color, a little more veggie? Works for me.
