Why have soup, when you can make it a meal with a muffin!

Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg lightly beaten
  • 1/4 cup melted butter
  • 1 cup blueberries fresh or frozen
Instructions
  1. Combine flour, sugar, baking powder, and salt. Mix in milk, egg, and butter; mix just until dry ingredients are moistened. Fold in blueberries. Spoon into greased muffin cups, fill 2/3 full with batter. ( I use mixed berries, and raspberries too.)
  2. Bake at 375 degrees for 20 to 25 minutes.
