Ingredients
  • 1 cup steel cut oats
  • 1 Tblsp. butter
  • 3 cups boiling water
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • 1/4 cup raisins
  • ½ cup walnuts
  • ¾ cup milk
  • 1 Tblsp. brown sugar
  • 1 tsp. vanilla
Instructions
  1. Put the water on to boil.
  2. In a medium sized, heavy bottomed sauce pan over medium heat, melt butter.
  3. Add oats and stir for 2 minutes. You’ll smell them roasting, they’ll turn golden and at the end they may start to ‘pop’.
  4. Quickly and carefully add all the water, it will boil up and steam!
  5. Stir, reduce heat to a simmer and cook without stirring for 20 minutes.
  6. Add salt, cinnamon, milk, raisins and walnuts. Stir and cook for 10 minutes more.
  7. Add vanilla and brown sugar, Stir and serve!
Terri's Notes

~ This one takes a little extra time, but it’s so worth the effort! Very satisfying too.
~ Cinnamon, nuts, raisins, brown sugar and other toppings you enjoy on your oatmeal may all be served on the side and added to taste.
