Ingredients
  • 1 - 14.75 oz. can salmon
  • minced onion up to ½ medium onion
  • 2 eggs lightly beaten
  • 1 tsp. ground pepper
  • 1 tsp. lemon juice
  • 1/4 cup milk
  • 1 whole pkg. saltine crackers crushed
  • Empty salmon & juice into a mixing bowl . remove bones if you like
Instructions
  1. Add the rest of the ingredients, mix well.
  2. Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties).
  3. Let set 5 minutes.
  4. In large frying pan heat 1/8 inch cooking oil to med. high temperature.
  5. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all the way through. Center should not be cold.
  6. Patties will be beautifully browned, a little crunchy on the outside!
  7. Taste great as is or served on a bun with tarter sauce.
  8. This mixture can be formed into a loaf and baked as well! Bake at 350 degrees for 45 minutes.
