Ingredients
crust
  • 2 cups flour
  • 1 cup butter
  • ¾ cup powdered sugar
Filling
  • 4 eggs
  • 2 cups of sugar
  • ¼-½ tsp. cinnamon
  • ½ cup flour
  • ½ tsp. salt
  • 1 tsp. vanilla
  • 4 cups thinly sliced rhubarb
Topping
  • 2/3 cup brown sugar
  • ½ cup flour
  • 1 tsp. cinnamon
  • 6 Tblsp. butter
Instructions
Crust
  1. ♦ Mix as for a pie crust and press evenly into a 15X10 jelly roll pan.
    ♦ Bake at 350 degrees for 15 minutes.
Filling
  1. ♦ Blend all ingredients, except the rhubarb, until smooth. Fold in rhubarb.
    ♦ Spread evenly over hot crust. Back at 350 degrees for 40 minutes.
Topping
  1. ♦ Mix with a fork to make crumbly topping.
    ♦ Sprinkle over bars and bake for another 10 minutes.
