Ingredients
Crust
  • 2 cups flour
  • 1/4 cup sugar
  • 1 cup cold butter
Filling
  • 5 cups rhubarb, chopped
  • 3 eggs, beaten
  • 1 cup whipping cream
  • 7 Tblsp. flour
  • 2 cups sugar
  • 1 tsp. vanilla
Topping
  • 2 - 3 oz. packages cream cheese, softened
  • ½ cup sugar
  • ½ tsp. vanilla
  • 1 cup whipping cream, whipped
Instructions
Crust
  1. ♦ Preheat oven to 350 degrees.
  2. ♦ Cut butter into flour and sugar until it makes a fine meal.
    ♦ Press into a 9 X 13" pan or baking dish.
    ♦ Bake for 10 minutes.
Filling
  1. ♦ Evenly cover crust with 5 cups chopped rhubarb.
    (Or 4 cups rhubarb and 1 cup strawberries)
  2. ♦ Whisk together remaining ingredients until smooth and pour over rhubarb.
    ♦ Bake for 40 - 45 minutes, until edges are golden and set.
    ♦ Cool completely.
Topping
  1. ♦ Beat together cream cheese, sugar and vanilla until smooth.
    ♦ Fold in whipped cream and spread over the bars.
    ♦ Keep refrigerated.
