Ingredients
  • 1 cup pumpkin purée, ½ of a 15 oz. can
  • 3 large eggs
  • 1/4 cup melted butter
  • ½ tsp. pumpkin pie spice
  • 1½ tsp. cinnamon
  • 2 Tblsp. brown sugar
  • ½ tsp. salt
  • 1 tsp. baking powder
  • 2 cups milk
  • 3 cups dry old-fashioned oats
  • walnuts or pecans
Instructions
  1. ♦ Preheat the oven to 350 degrees.
  2. ♦ In a large bowl, mix together the pumpkin purée, eggs, butter, pumpkin pie spice, cinnamon, brown sugar, salt, and baking powder until smooth. Stir in milk.
  3. ♦ Add the oats and mix well. Pour mixture into a 9 X 13 pan.
    ♦ Bake for 35-40 minutes, until the center is firm and it’s golden brown around the edges.
  4. ♦ Serve hot right out of the oven or refrigerate until ready to serve.
  5. ♦ Top with milk, brown sugar or maple syrup as desired.
  6. ♦ Reheats wonderfully, so making ahead, pre-filling the bowls and storing in the fridge works great. Just add milk before you pop it into the micro-wave makes a great, QUICK, hot breakfast.
  7. ♦ I’ve also used an entire 15 oz. can of pumpkin with 1/3 cup brown sugar.
    ♦ Baking time is about 45 minutes when I use the whole can of pumpkin.
