  • CourseBrunches & Bread
Ingredients
  • 3 medium potatoes – peeled and grated
  • 1 Tblsp. lemon juice tossed with potatoes to keep them from browning
  • ¼ cup melted butter
  • 2 tablespoons all-purpose flour
  • ¼ cup finely chopped onion
  • 1 Tblsp. thinly sliced green onions
  • 1 large egg beaten
  • ¼ tsp. baking powder
  • ½ teaspoon salt ¼ tsp. pepper
  • 1 Tblsp. each oil and butter as needed to fry each batch
Instructions
  1. Drain/press excess moisture (and lemon juice) off of potatoes.
  2. Add other ingredients and stir to mix well.
  3. In a heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place spoonfuls of potato mixture into hot oil, lightly using fork to spread out to 1/4 to 1/2 inch thick patties.
  4. Brown on one side, turn and brown on the other, ~3 minutes on each side.
  5. Let drain on paper towels.
  6. Keep warm and serve hot with applesauce or sour cream!
