Ingredients
  • 2 cups peeled grated potatoes
  • 2 tablespoons finely chopped onion
  • 2 eggs beaten
  • 1/4 cup all-purpose flour
  • ½ teaspoon salt
  • 2 tablespoons oil
Instructions
  1. Drain/press excess moisture (and lemon juice) off of potatoes.
  2. Add other ingredients and stir to mix well.
  3. In a heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place spoonfuls of potato mixture into hot oil, lightly using fork to spread out to 1/4 to 1/2 inch thick patties.
  4. Brown on one side, turn and brown on the other, ~3 minutes on each side.
  5. Let drain on paper towels.
  6. Keep warm and serve hot with applesauce or sour cream!
