Ingredients
Crust
  • 6 cups all-purpose flour
  • 2 cups Crisco
  • 2 tsp. salt
  • ice water
Filling
  • 10 lbs. potatoes, peeled and diced, about ¼ inch
  • 3 large/4 med. sweet onions, finely chopped
  • 2 lbs. carrots, shredded
  • 5 lbs. ground beef, 90% lean
  • 1 Tblsp. salt
  • 2 tsp. pepper
Instructions
Crust
  1. ♦ In a large bowl, cut shortening into flour until it’s a small crumb mixture.
    ♦ Gently toss crumbs and sprinkle in the ice water until you can form a soft dough. Set aside.
Filling
  1. ♦ In a large mixing bowl or clean dish pan, mix all the ingredients with your hands, breaking up beef until you have a hash like mixture.

    ♦ Gloria uses about 1/3 cup dough and 1 cup filling per Pastie.
    ♦ On a floured board or counter top, pinch off a dough ball and roll into more of an oval than a circle, about 10X8 inches.
    ♦ Center the filling on one end, fold dough over the filling to cover.
    ♦ Roll and pinch or crimp edges to seal.

    ♦ Arrange on ungreased baking sheets. Cut small slits in top of pasties or prick with a fork.

    ♦ Bake at 350 degrees for 1 hour. Serve with butter and sour cream or ketchup. Enjoy!
    ♦ Makes 16 Pasties.

~ Thank you, Gloria!  This makes a fun afternoon with friends!
~ These can be individually wrapped and frozen raw or partially baked–cool before wrapping. Unwrap and bake as needed, do not thaw first.
~ Pastie Pie is also delicious, just make a double crust pie and fill with meat mixture.
