Ingredients
  • 4 chicken breast halves
  • 1 cup Buttermilk
  • 1½ cups Panko bread crumbs
  • ½ tsp. garlic powder
  • ½ tsp. thyme
  • ½ tsp. paprika
  • ½ tsp. Lawry Seasoning Salt
  • 3 shakes of cayenne pepper
  • ¼ cup melted butter
Instructions
  1. ♦ Place chicken breasts in a deep dish, just big enough to hold them all in a single layer.
    ♦ Pour buttermilk over them, turn to coat, cover and refrigerate for 2-4 hours.
  2. ♦ Mix bread crumbs and seasonings together in a shallow dish. Toss with melted butter until evenly mixed.
  3. ♦ One piece at a time, just let excess buttermilk drip off chicken breast and press both sides of each piece into bread crumbs.
    ♦ Arrange breaded chicken pieces in a foil lined pan or baking dish.
    ♦ Sprinkle extra crumbs on top.
  4. ♦ Bake, uncovered, at 400 degrees for 30 – 40 minutes.
    ♦ Cook time depends on thickness of meat, until juices run clear. But you won’t see much juice – it all stays inside of the most tender, juicy fried chicken you’ve ever had!
Terri's Notes

~ Do use the Panko crumbs, they make the difference.
~ Mixing the crumbs with the melted butter gives a much better mix of spices and an even, extra- crispy crust.
~ Spices are mild, feel free to add more of any or other spices to your taste.
~ Have fun with the extra buttermilk!  Biscuits, Pancakes, St. Anthony’s Cake
