Ingredients
  • 1 Tblsp. canola oil
  • 2 chicken breasts, sliced into ½-inch strips
  • 1-2 Tblsp. garlic, chopped
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
  • ¾ cup heavy cream
  • ½ cup grated parmesan cheese
  • ¼ cup pesto
  • ¾ cup cherry tomatoes, cut in half
  • 3 cups penne pasta, cooked and drained
  • chopped fresh basil and parmesan to garnish
Instructions
  1. Heat the oil in a pan over high heat. Add chicken, garlic, salt and pepper - cook until chicken is lightly browned.
  2. Stir in the cream, Parmesan and pesto, stirring until evenly combined.
  3. Simmer until sauce is thick and creamy.
  4. While that’s finishing, prepare pasta according to package directions. Drain.
  5. Add pasta and tomatoes to the skillet, toss until evenly coated. Remove from heat. Garnish with a sprinkle of Parmesan cheese and fresh basil.
  6. Serves 4
