Ingredients
- 1 Tblsp. canola oil
- 2 chicken breasts, sliced into ½-inch strips
- 1-2 Tblsp. garlic, chopped
- ½ tsp. salt
- ½ tsp. freshly ground black pepper
- ¾ cup heavy cream
- ½ cup grated parmesan cheese
- ¼ cup pesto
- ¾ cup cherry tomatoes, cut in half
- 3 cups penne pasta, cooked and drained
- chopped fresh basil and parmesan to garnish
Instructions
- Heat the oil in a pan over high heat. Add chicken, garlic, salt and pepper - cook until chicken is lightly browned.
- Stir in the cream, Parmesan and pesto, stirring until evenly combined.
- Simmer until sauce is thick and creamy.
- While that’s finishing, prepare pasta according to package directions. Drain.
- Add pasta and tomatoes to the skillet, toss until evenly coated. Remove from heat. Garnish with a sprinkle of Parmesan cheese and fresh basil.
