Mexican-Rub Burger Grill

Ingredients
  • 2 lbs. of good ground beef
  • 6 burger buns of choice
  • 4 Tblsp. butter, softened
  • 1 small garlic clove, minced
  • 1/4 tsp. finely grated lime zest
  • 1 Tblsp. fresh lime juice
  • 1½ tsp. Kosher salt
  • 1½ tsp. sweet paprika
  • 1½ tsp. ground cumin
  • 1½ tsp. chipotle powder
Instructions
  1. ♦ Light a grill or preheat a grill pan.
  2. ♦ Shape ground meat into 6 patties.
  3. ♦ In a small bowl, combine the butter, garlic, lime zest, lime juice and a pinch of salt.
    ♦ Spread Lime Butter evenly over cut side of both top and bottom of buns, set aside.
  4. ♦ In another bowl, combine the paprika, cumin and chipotle powder with kosher salt.
    ♦ Sprinkle and rub spice mixture all over burgers.
  5. ♦ Grill burgers over moderately high heat, turning once, until done to your taste.
    ♦ Grill or broil buns, the cut/buttered side up, until golden and toasted.
    ♦ Top with burgers and serve with all your favorite toppings.

~ One of the all-time best recipes I’ve posted!
~ The original recipe called for 4 12 oz. boneless rib eye steaks, 1 inch thick.  We tested this recipe with the Rib-eyes, New York Strips and THEN, we decided the burgers needed to be a recipe all their own. You don’t have to eat steak to enjoy the good life!
~ The leaner the meat, the easier it is to over-cook.  I’m a fan of the 85/15 for grilling.
