Albondigas (al bon dee gauze), a savory meatball and vegetable soup.

Ingredients
  • Mix for Meatballs
  • 1 pound lean ground beef
  • 2 cloves garlic minced 1 onion, minced
  • 1 slice bread crumbled
  • 1 egg
  • 2 tablespoons water
  • Mix it up shape into meatballs.
  • cups Heat 4water.
  • in Dissolve 2 cubes beef bouillonwater.
  • in Bring to a boil: dropthe meatballs, and cook for 5 minutes.
  • Add:
  • 1 1 /2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1 1 /2 teaspoon ground cumin
  • 3 carrots sliced
  • 1 green bell pepper chopped
  • 2 stalks celery chopped
  • 1 can stewed tomatoes with liquid 14.5 ounce
  • 3-4 potatoes cubed (optional)
Instructions
  1. salt and pepper to taste
  2. Simmer soup for 30 to 45 minutes.
  3. Serve in bowls, with salt, pepper and hot sauce to taste
