Ingredients
  • 1 lb. ground meat (Angie uses ground turkey lean ground beef works great!)
  • 1-2 cloves fresh garlic crushed
  • 1 can Chili Beans with sauce
  • 12 oz. jar of salsa
  • 1/2 cup - 1Minute Rice
Instructions
  1. Fritos or Tortilla Chips
  2. Shredded Cheddar Cheese
  3. Sour Cream
  4. Brown meat in a frying pan. Add garlic.
  5. Once meat is browned, add salsa, chili beans
  6. Cook over medium heat until rice is done.
  7. Once it's cooked, remove from heat, sprinkle with cheddar cheese, cover until is cheese melted.
  8. Serve with chips
Terri's Notes

- This is a great stove top dish. Can be saved and served out of a crock pot on “low” . . . watch it, it gets brown easily.
- I cook it and refrigerate. As needed, a single serving heats well in the microwave and is a great way to keep the family fed as they run in and out.
- Use the recipe as a place to begin . . .

I substituted “nearly cooked” brown rice for the Minute Rice.
Add some onion to the ground meat as it’s cooking.
No Salsa? Add a can of diced tomatoes and a packet of taco seasoning.
More cheese, no cheese….have some fun in the kitchen!
