MARINATED SALMON WITH MANGO-KIWI RELISH

Ingredients
  • In a large zip-lock plastic bag combine:
  • 1 tablespoon honey
  • 2 teaspoons low-sodium soy sauce
  • 1 teaspoon olive oil
  • 1/4 teaspoon black pepper
  • Add:
  • 4 inch salmon fillets 6-ounce, about 1thick
Instructions
  1. Seal the bag and marinate 10 minutes, turning occasionally.
  2. While fish marinates, heat grill pan or large nonstick skillet over medium-high heat. Remove fish from bag, discarding marinade.
  3. Coat pan with cooking spray. Add fish, and cook 5 minutes on each side or until the fish flakes easily when tested with a fork.
  4. Serve with Mango-Kiwi relish!
  5. Relish:
  6. 1/2 cup peeled, diced mango
  7. 1/2 cup peeled, cubed kiwi
  8. 1/4 cup chopped fresh cilantro (it's worth it to buy fresh)
  9. 1/4 cup fresh orange juice
  10. Combine ingredients. Serve over fish.
  11. Notes: Leftovers are fabulous served over a chilled green salad! Try a sweet, tangy dressing, poppy seed or fruited vinaigrette.
