Ingredients
  • 5-6 boneless skinless chicken breasts (about 2 pounds)
  • 1 Tblsp. honey
  • 1 Tblsp. oil
  • 1 Tblsp. lime juice
  • 2 cups crushed tortilla chips
  • 1 16 oz. jar salsa
  • 1 cup shredded Monterey jack
Instructions
  1. Pound out the chicken breasts so that they are an even thickness.
  2. In a pie plate or shallow dish, mix honey, oil and lime juice.
  3. Dip chicken into the honey/lime mixture, turning to coat both sides.
  4. Coat both sides generously with chip crumbs and arrange in a 9X13 inch baking dish.
  5. I sprinkle a few more crumbs on top of chicken once they’re all nestled in there.
  6. Bake for 15 minutes in a 400 degree oven.
  7. Remove from oven and pour salsa down the middle of each chicken piece, leaving crunchy edges. Top with 1 cup (or more) of the cheese.
  8. Return to oven for 10-15 minutes more, depending on the thickness of the chicken.
  9. Serve over a bed of black beans and rice with a side of sour cream!
