Ingredients
  • 3-4 boneless skinless chicken breasts, cooked, cubed or shredded
  • 1 package Black Bean and Rice mix Zatarain’s or Bear Creek
  • 1 16 oz. jar salsa
  • 1 cup or more frozen sweet corn
  • 1 can black beans rinsed and drained
  • 2 cups shredded cheese Monterey Jack, Cheddar or a blend
  • crushed tortilla chips optional
Instructions
  1. Prepare chicken, or chop leftover chicken or turkey from last night’s dinner.
  2. Prepare Black Bean and Rice mix according to package directions.
  3. Mix rice mixture with chicken, salsa, corn, beans and 1 cup cheese.
  4. Pour into a 2 qt. casserole dish.
  5. Cover and bake at 350 degrees for 30 minutes.
  6. Uncover. Top with chips and remainder of the cheese.
  7. Return to oven for 15 minutes more, until cheese is melted.
  8. Serve with a side of sour cream, with chips or wrapped in a warm tortilla!
  9. This is a great use of leftovers and an easy make-ahead dish! Make the night before and it’s ready to pop in the oven when you get home from work.
