Ingredients
  • in Mix togetherthe bottom of a roaster or Crockpot:
  • 5 Tblsp. lemon juice
  • 3-5 bay leaves
  • 1 Tblsp. oregano
  • 1 tsp. garlic salt or 1/3 tsp. garlic powder
  • 1 tsp. pepper
  • ½ cup water
  • Lawry’s season salt to taste
Instructions
  1. Stir the seasonings.
  2. Add a 3 - 4 pound chuck roast.
  3. Cover and bake at 250 degrees for 5 hours.
  4. Remove bay leaves and any visible fat.
  5. Shred with two forks, mix with juice and bake 15 minutes more.
  6. Serve on Italian bread or hard rolls with sliced cheese and a garnish of sliced Jalpeno or Sweet Banana Peppers. For an extra special touch, butter the inside of the top ½ of the bun, fill the sandwich with meat, top with cheese and lay the opened sandwich under the broiler for a minute to brown the inside of the bun and melt the cheese.
Terri's Notes

- Prep in the Crockpot before work and let it cook all day on low.
- Plan ahead, look for roasts on sale and freeze!
- OR...Cook up the meat and freeze it until the day of a party, or in smaller family-size containers.
- I put a frozen roast in the oven before I go to bed and set the timer. When I wake up, it’s done and ready to be shredded.
- 1 pound of meat makes 4 - 5 sandwiches.
