Ingredients
  • slices deli ham(not too thick or thin pliable, but no leaks!)
  • eggs
  • snipped basil parsley or chives
  • Cheese - feta fresh mozzarella, swiss or cheddar
  • fresh seeded, chopped tomato (optional)
Instructions
  1. Lightly butter or spritz a muffin tin with cooking spray.
  2. Heat the oven to 375 degrees.
  3. Fold each ham slice into quarters, open like a cone and place - point end down in muffin cup. Open it up a bit so it looks sort of ruffled sticking up out of the tin.
  4. Crack an extra large egg into each ham cup.
  5. Season with pepper, sprinkle with cheese, tomato and fresh herbs.
  6. Bake for 15 to 20 minutes, until the egg white is set.
  7. Serve with fresh fruit kabobs, a hash-brown casserole, English muffins or toasted bagels.
