Gluten Free Chia Seed Peanut Butter Balls

  • 1 cup almond flour
  • 1 cup gluten free oat flour
  • ¼ teaspoon baking soda
  • ¼ cup honey
  • ¼ cup coconut oil
  • ¼ cup peanut butter
  • ¼ cup Chia seeds
  • Sea salt, just a sprinkle
  1. ♦ Think Play-dough! Mush, mix, stir all ingredients together to blend.
    ♦ Shape into bite-sized balls, chill and ENJOY!
    ♦ Store in an air tight bag or container in the fridge. These freeze well.
Recipe Notes

~ These are as much fun to make as they are to eat!  I added a tsp. of cinnamon and rolled some in oatmeal and some in mini-chocolate chips.
~  You could add a tsp. of vanilla extract or use cashew or almond butter.
~ Perfect for a fast breakfast, healthy lunch treat or a snack on the way to the game.
~ No oat flour?  Put a full cup of oatmeal in your favorite food processing gadget and pulse.
