Ingredients
- Mix with a pastry blender until course crumbs form:
- 1 1/3 cups flour
- ½ cup finely ground almonds
- 1/3 cup sugar
- 1 tsp. grated lemon rind
- 1/4 tsp. salt
- 6 Tblsp. cold butter cut into pieces
- Whisk together:
- 1 egg
- 1 tsp. vanilla
Instructions
- Add egg to flour and butter mixture and mix until soft dough ball forms. Wrap in plastic wrap and chill for an hour or overnight.
- Preheat oven to 350 degrees.
- On a greased and floured baking sheet or pizza pan, or on your favorite baking stone.
- Pat dough into a 10 inch circle, forming a bit of an edge all around.
- Prick all over with a fork. Bake 25 minutes, until golden.
- Cool completely.
- Heat:
- 3/4 cup seedless jam with
- 1 tsp. lemon juice
- Heat until melted and spreadable.
- Spread ½ cup jam over crust.
- Arrange 2 pints Blueberries, Red Raspberries, Strawberries - or a mixture of them over prepared crust. Drizzle or brush remaining jam over the berries.
- Serve with whipped cream.
Terri's Notes
Add a yummy cream cheese layer by mixing an 8 ounce package of softened cream cheese with 1/3 cup of powdered sugar and 1/2 tsp. vanilla or almond extract.
Spread this mixture in the bottom of the pastry shell before putting on the jam and berries!
