4fish filletsfresh or thawed - cod, perch, haddock or tilapia
1large fresh lemonsliced
olive oil or melted butter
seasoningfresh pepper or I used Montreal Steak Seasoning
Toss onion shreds and carrots together and divide evenly, placing a mound in the center
of each sheet of foil.
Top each with a serving of fish.
Drizzle with olive oil or melted butter.
Sprinkle with seasoning.
Top with a slice of lemon.
Bring up two opposite sides of the foil and roll to seal. Roll up each end to make a packet.
Arrange packets on a cookie sheet and bake at 375 degrees for 40-45 minutes.
Slide out onto a plate to serve.
~ One of the best dishes I’ve tried in a while – flavor blend, color, texture… that lemon-butter sauce was perfect with fresh asparagus. No mess to clean up and no leftovers either!
~ Would be a great dish for company or prepared on the grill too.
