FISH IN FOIL

Ingredients
  • 4 large squares of foil
  • 1 large sweet onion very thinly sliced
  • 2 cups carrots shredded
  • 4 fish fillets fresh or thawed - cod, perch, haddock or tilapia
  • 1 large fresh lemon sliced
  • olive oil or melted butter
  • seasoning fresh pepper or I used Montreal Steak Seasoning
Instructions
  1. Toss onion shreds and carrots together and divide evenly, placing a mound in the center
  2. of each sheet of foil.
  3. Top each with a serving of fish.
  4. Drizzle with olive oil or melted butter.
  5. Sprinkle with seasoning.
  6. Top with a slice of lemon.
  7. Bring up two opposite sides of the foil and roll to seal. Roll up each end to make a packet.
  8. Arrange packets on a cookie sheet and bake at 375 degrees for 40-45 minutes.
  9. Slide out onto a plate to serve.
Terri's Notes

~ One of the best dishes I’ve tried in a while – flavor blend, color, texture… that lemon-butter sauce was perfect with fresh asparagus. No mess to clean up and no leftovers either!
~ Would be a great dish for company or prepared on the grill too.
