Ingredients
  • 3 Tblsp. oil
  • 2 lbs. beef stew meat, chuck is good
  • ½ cup flour
  • 1 large onion, thinly sliced or diced
  • 2 cloves of minced garlic
  • 2-3 carrots, chopped into large chunks
  • 1 green pepper, thinly sliced or diced
  • 1 red pepper, thinly sliced or diced
  • 1 yellow pepper, thinly sliced or diced
  • 1-14.5 oz. can beef broth
  • 1-14.5 oz. can diced tomatoes with green chilies, undrained
  • 1 packet fajita seasoning mix
  • 1 tsp. smoked paprika
  • 2 tsp. cumin
Instructions
Notes:
  1. ♦ See Instant Pot or Crockpot instructions below.
    ♦ Serve with sour cream, fresh cilantro and tortilla chips!
    ♦ You could also easily serve this over rice.
Slow Cooker
  1. ♦ Put cubed meat into bottom of the dish and toss with flour to coat.
    ♦ Add all other ingredients, give it a stir and cook on low for 10-12 hours.
Instant Pot
  1. ♦ Place stew meat and flour in a bowl or large resealable plastic bag. Toss to coat.
    ♦ Set Instant Pot to sauté and heat oil in the uncovered pan.
    ♦ Add coated beef to pot and brown on all sides.
    ♦ Add broth, tomatoes, onion, garlic, carrots, any extra flour and seasonings.
    ♦ Stir to combine. Pressure-Cook on high for 35 minutes.
    ♦ Let the pressure drop naturally and carefully remove the lid.
    ♦ Add peppers to the pot, adjust sauté setting to ‘less’ and simmer, uncovered, until the peppers are tender.
Terri's Notes

~ This recipe is fairly mild, add salt and pepper or chili powder to taste.
~ I like smoked paprika and cumin, but you might use a second pack of fajita seasoning instead.
