Ingredients
  • 2 16 oz. tubes Jimmy Dean Italian pork sausage
  • 2 16 oz. packages coleslaw mix
  • 2 large onions, thinly sliced
  • red or green bell pepper, optional
  • 1 tsp. minced garlic
  • 2 tsp. ground ginger
  • salt and pepper to taste
  • 1+ Tbls. coconut oil
  • baby red potatoes
Instructions
  1. In a large skillet, brown sausage. Drain if needed.
  2. Add coleslaw, veggies, seasonings and coconut oil.
  3. Sauté until veggies are tender crisp or until some begin to brown on edges and caramelize.
  4. Serve alone or over boiled and buttered baby red potatoes.
  5. Leftovers are even better!
Terri's Notes

~ Great 1-pan ‘farm to table’ supper!  Fast, gluten-free, sugar-free, dairy-free, low-carb!
~ Nicki likes Jimmy Dean, but feel free to use your favorite bulk sausage blend.
~ Keep it fresh, replace slaw mix with 2 lbs. fresh, shredded cabbage and carrots.
