Ingredients
  • 1 cucumber – seeds removed diced (about 1½ cups)
  • 1 bunch of green onions thinly sliced
  • 1 8 oz. package cream cheese
  • 2 Tblsp. Miracle Whip
  • clove Garlic powder or garlic salt to taste (Terri used oneof garlic finely chopped with a pinch of sea salt)
Instructions
  1. Mix cream cheese, Miracle Whip; add cucumber, green onions and garlic powder/salt.
  2. This was still too chunky for me so I gently used my immersion blender to smooth it out a bit, but left some texture.
  3. Serve with chips, crackers, vegetables. Also great as a sandwich spread, on a bagel loaded with veggies.
Terri's Notes

~A sprinkle of fresh dill would be perfect for garnish or extra flavor
