CRUNCHY CHICKEN CASSEROLE

Ingredients
  • 1 cup chopped celery
  • 1 Tblsp. butter
  • 2 cups cooked chicken or turkey diced
  • cups prepared rice brown rice is good
  • 1 can cream of mushroom soup
  • ¾ cup mayonnaise
  • 1 8 oz. can water chestnuts drained
  • ½ cup sliced almonds (+ ½ cup for topping if desired)
  • 2 Tblsp. chopped onion
  • Topping
  • 2 tablespoon butter mix with melted
  • 1 cup crushed cornflakes
  • ½ cup almonds optional
Instructions
  1. Toast almonds in oven about 5 minutes @ 250 degrees.
  2. Cook chicken and dice.
  3. In a skillet, sauté celery in butter until tender. Remove from heat.
  4. Add next 7 ingredients and mix. Spoon into ungreased 2 ½ qt. baking dish.
  5. Combine melted butter and corn flakes, add almonds if desired,
  6. sprinkle on top of casserole.
  7. Bake, uncovered, at 350 degrees for 30-45 minutes.

  10. Layer: 2-3 cups of cooked, diced chicken or turkey, sliced mushrooms,
  11. diced onions and sliced almonds into a 13 X 9 glass baking dish.
  12. Mix: 8 oz. of sour cream, 1 can each cream of chicken and cream of mushroom soup.
  13. Spoon soup mixture over meat mixture.
  14. Make 1 package of Stove Top Stuffing according to the package directions.
  15. Fluff stuffing with a fork and spoon loosely over casserole.
  16. Bake at 350 degrees for 1 hour, until hot and bubbly.
