Ingredients
  • ½ cup soft or melted butter
  • ½ cup oil
  • cups sugar
  • 2 eggs
  • 2 tsp. vanilla
  • ½ cup milk with 1 tsp. lemon juice or vinegar to sour
  • cups flour
  • 4 Tblsp cocoa
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. cinnamon
  • 1 tsp. salt
  • 2 cups shredded/grated zucchini
  • ½ cup chopped walnuts or pecans optional.
  • ½ cup chocolate chips
Instructions
  1. Cream together butter, oil and sugar. Add eggs, vanilla and milk-mix well.
  2. Add dry ingredients. Mix by hand until blended.
  3. Stir in zucchini, and nuts if desired.
  4. Divide batter into prepared muffin tins, lined with paper or foil muffin cups.
  5. Sprinkle with chocolate chips.
  6. Bake at 350 degrees for about 20 minutes. Touch or toothpick test works.
  7. Dust with powdered sugar to serve. Makes 2 dozen muffins.
  8. Frosting with Cream Cheese frosting makes them yummy cupcakes!
