Ingredients
  • 4 chicken breasts, cut in half
  • 1/4 cup butter
  • 1/2 cup flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. ground ginger
  • 2 cups sliced mushrooms
  • 1/4 cup butter
  • 4 Tblsp. flour (leftover seasoned flour)
  • 1/2 cup water
  • 1/2 cup milk
  • 1 cup grated Swiss cheese, plus some cheese to garnish
Instructions
  1. ♦ In a shallow dish or pie plate, mix 1/2 cup flour with the salt, pepper, and ginger.
    ♦ Dredge all chicken pieces in the seasoned flour and shake off excess.
  2. ♦ In a large skillet, melt 1/4 cup butter, and brown chicken pieces on both sides.
    ♦ Arrange chicken in a pyrex baking dish or pretty casserole.
    ♦ Sprinkle chicken with mushrooms and set aside.
  3. ♦ In skillet, add another 1/4 cup butter, melt. Stir in 4 Tbsp. of flour until smooth. ♦ Add milk and water, cook and stir until thickened. ♦ Add Swiss cheese and stir until melted.
    ♦ Pour sauce over the chicken and bake uncovered at 350 degrees for 35-40 minutes.
    ♦ During the last 5 minutes, sprinkle with additional 1/2 cup Swiss cheese for garnish.
Terri's Notes

~ Love having a casserole that's good enough to serve at special dinner.  Served hot from the oven -it stays warm until we can all enjoy it!   And trust me, this dish is special.
