Ingredients
  • 1 ripe avocado
  • 3.5 jar pesto or ½ of a 6 oz. jar
  • 1 loaf of Ciabatta bread 14 oz. rectangular loaf
  • ¼ lb. fresh spinach
  • 1 large chicken breast cooked, thinly sliced
  • tomato thinly sliced
  • ½ lb. crisp cooked bacon
  • red onion thinly sliced
  • ¼ lb. Swiss cheese sliced or grated
Instructions
  1. In a small bowl, mask avocado, mix with pesto and set aside.
  2. Slice Ciabatta loaf in half horizontally, to make a large bun.
  3. Layer on ingredients, topping with cheese.
  4. Spread all of pesto mixture on the cut side of the sandwich ‘top’.
  5. Wrap entire sandwich in foil and bake at 450 degrees for 10-15 minutes –until heated through and cheese melts.
  6. Slice and serve!
  7. Makes 4-5 sandwiches and you can easily make two big loaves at once to serve a larger crowd.
  8. Leftovers are even delicious cold!
Terri's Notes

~ About ½ pound of good deli turkey can be used in place of the chicken.
~ This Pesto/Avocado spread will be a healthy hit on any sandwich or burger!
