Ingredients
  • Mix:
  • 1 tsp. garlic powder
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • Sprinkle over:
  • 4 chicken breast halves
  • Grill or broil seasoned chicken keep warm.
  • In a large skillet over med-high heat, heat:
  • 1 Tblsp. olive oil
  • Add:
  • 1 package mushrooms sliced ( I like the baby portabellas), 8-ounce
  • 1 small zucchini sliced
  • ½ cup red onion chopped
  • 4 garlic cloves minced
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • Saute for two minutes and add:
  • 1 cup plum tomato chopped
  • ½ cup fresh basil torn or snipped
  • 4 tsp. balsamic vinegar
Instructions
  1. Saute all veggies for three minutes longer, until tender and heated through.
  2. Spoon veggies over the chicken and serve with a sprinkle of fresh grated Parmesan cheeseover your favorite pasta ~
