Pork Loin roast, whole boneless loin is perfect!
Lay roast, fat side up, in a roaster or pyrex baking dish.
Season with salt, pepper, and thyme to taste
Bake uncovered, at 325 degrees, for a total of 2 ½ hours,
or until meat thermometer registers 170 degrees.
*Sauce is added for the last ½ hour of bake time.

Ingredients
  • In a saucepan, combine
  • 1 cup whole or chopped cherry preserves
  • ½ cup of Sweet Bing cherries, canned in heavy syrup
  • ¼ cup red wine vinegar
  • 2 Tblsp. light corn syrup
  • ¼ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground cloves
Instructions
  1. ♦ Heat to a boil and simmer for 2 minutes.
    ♦ Spoon over roast for the last 30 minutes it is cooking in the oven.
    ♦ Baste several times.
Terri's Notes

~ Sauce may be simmered for 20 minutes and simply served on the side.
