Ingredients
  • For filling Mix:
  • 1 pound ground beef browned and drained
  • 10 ounces Spinach chopped and cooked (or 10frozen spinach, thawed and drained)
  • 1 cup shredded mozzarella cheese
  • 1/3 cup Parmesan cheese
  • 2 eggs slightly beaten
  • ½ tsp. oregano
  • 1/4 tsp. pepper
  • in For filling a saucepan, mix:
  • 1 16 ounce can tomatoes stewed, crushed or diced all work
  • 1 6 ounce can tomato paste
  • 1 cup water
  • ½ cup chopped onion
  • ½ tsp. oregano
  • ½ tsp. salt
  • 1/4 tsp. garlic powder
  • Simmer sauce for 10 minutes.
Instructions
  1. Prepare 12 large manicotti noodles according to package directions.
  2. Fill noodles with beef/spinach mixture and arrange in a 9 X 13 inch pan or baking dish.
  3. Pour sauce over filled noodles and cover with foil.
  4. Bake at 350 degrees for 40 minutes.
  5. Uncover, and top with 1 more cup of shredded Mozzarella cheese.
  6. Bake 10-15 minutes longer, until cheese melts.
Terri's Notes

-My kids really eat this...
-Makes a great way to hide dark, green leafy vegetables!
-Easily made a day ahead. Cover with foil and store in fridge until ready to bake.
