Ingredients
  • 2 Cups flour
  • 1 1/4 Cups sugar
  • 2 tsp baking powder
  • 2/3 Cup melted butter or a mix of butter and coconut oil
  • 1 Cup milk
  • 2 eggs
  • 2 to 3 cups blueberries fresh or frozen
  • 3-4 Tblsp sugar for cinnamon sugar mix
  • 1 tsp cinnamon for cinnamon sugar mix
Instructions
  1. Preheat oven to 350 degrees. In a medium bowl mix flour, sugar, baking powder and salt. Add butter, milk and eggs, mix well. Pour the mixture into a buttered/floured 9x13 inch baking dish. Sprinkle blueberries evenly over the top. Mix sugar and cinnamon and sprinkle evenly over the blueberries. Bake 40-45 minutes, until cake springs back to the touch.
Terri's Notes

Blueberry Boy Bait (for bars)

2 cups flour

1½ cups sugar
2/3 cup cold butter

2 tsp. baking powder

1 tsp. salt

1 cup milk

2 eggs, separated

2 cups blueberries
1 teaspoon cinnamon, optional

Preheat oven to 350 degrees. In a medium bowl mix flour, sugar and cut in cold butter, until crumbly-like pastry dough. Set aside ¾ cup of this mixture for topping, adding cinnamon if desired.
To remainder of flour mixture, add baking powder, salt, milk and egg yolks. Mix well.

Beat egg whites until firm; fold into batter and pour into a buttered/floured 9x13 inch baking dish. Scatter blueberries evenly over the batter and sprinkle with the remainder of the reserved flour/sugar/butter mixture to make a crumb topping.

Bake at 350 degrees for 40-50 minutes, until cake springs back to the touch.
Serve warm, or cool and cut into bars.
