Ingredients
  • 4 chicken breasts, cubed or chopped
  • 5 oz. slivered almonds, toasted
  • 2 Tblsp. poppy seeds
  • 1 bag shredded coleslaw mix
Dressing
  • ¼ cup sugar or Stevia
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • ½ tsp. salt
  • ½ tsp. pepper
Instructions
  1. ♦ Mix dressing ingredients and refrigerate.
  2. ♦ Combine chicken, almonds and poppy seeds. Chill.
  3. ♦ Just before serving, toss chicken mixture with dressing. Use as much as looks good to you…without it getting too soupy. Chicken will soak up quite a bit of the dressing.
  4. ♦ Serve over a bed of slaw mix. Or toss with slaw mix as desired and serve in a wrap!
