BAKED OATMEAL, HOT OR COLD!

Ingredients
  • cups quick oatmeal or 2¾old-fashioned oatmeal raw
  • 2/3 cup brown sugar as little as 1/3is fine
  • ¾ cup raisins or other dried fruit
  • ½ cup chopped nuts
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • 3 1/3 cups milk
  • 4 egg whites or 3 whole eggs lightly beaten
  • 1 tsp. oil
  • 1 or 2 tsp. vanilla or other flavoring
Instructions
  1. Preheat oven to 350 degrees. Grease an 8 x 8 or 11 X 7 pan.
  2. Mix ingredients together in a large bowl. Pour into greased pan.
  3. Bake for 55-60 minutes until firm to touch and top is golden brown.
  4. Can eat immediately or cut into bars and eat cold on the go.
  5. Reheat in the microwave, serve with or without milk.
  6. Easy and tastes great! This takes about 5-10 minutes to mix up. Makes 6-8 servings
Terri's Notes

~ Feel free to use rice or almond milk. I have used part 1/2 & 1/2, buttermilk, or a bit of
coffee creamer if I am short on almond milk. It all works.
~This also freezes well for up to 2 weeks or so.

I made it as written once, then with a large ripe, mashed banana, walnuts and only 2 Tblsp. brown sugar, and again with dried cherries, sliced almonds, almond extract and vanilla flavored almond milk – all got great reviews. Do also try the Amish Baked Oats recipe! No boring breakfast here, Terri
