AUNT JO'S PARMESAN CHICKEN

Ingredients
  • 1 cup very fine bread crumbs
  • 2/3 cup dry grated parmesan cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. minced parsley or more for color
  • 1/8 tsp. garlic powder
  • 1/8 tsp. paprika
  • 4 large boneless skinless chicken thighs (may use breasts, but I prefer thighs)
  • ½ cup butter melted in a shallow dish or pie plate
  • lemon juice
Instructions
  1. Combine bread crumbs, parmesan, salt, pepper, parsley, garlic powder, and
  2. paprika in a 2nd shallow dish.
  3. Dip chicken in melted butter, then in crumb mixture.
  4. Tuck sides under and arrange in a baking pan.
  5. Sprinkle generously with lemon juice and refrigerate for at least ½ hour.
  6. Bake at 350 degrees for 45 minutes to 1 hour, uncovered. Do not turn.
Terri's Notes

~ This mixture easily covered 8 regular sized, bone-in, skinless thighs.
~ A family favorite, perfect for company, just right to take to a friend in need!
