Ingredients
  • 1 Tblsp. butter
  • 1 small onion, thinly sliced
  • 4 fresh or frozen Cod or Haddock fillets (6 oz. each), thawed
  • 1 tsp. seasoned salt
  • 1/2 tsp. dill weed
  • 1/4 tsp. pepper
  • 1/4 cup Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 Tblsp. minced fresh parsley
  • 1 Tblsp. lemon juice
  • 2 Tblsp. sliced almonds, toasted (I always use a little more!)
Instructions
  1. ♦ Place butter in 13" X 9" baking dish; pop that into a 400 degree oven until melted.
    ♦ Spread butter over bottom of dish; cover with onion.
    ♦ Arrange fish over onion; sprinkle with season salt, dill and pepper.
    ♦ Combine the Parmesan cheese, mayonnaise, parsley and lemon juice; spread over fish.
    ♦ Bake uncovered at 400 degrees for 18-20 minutes or until fish flakes easily with fork.
    ♦ Sprinkle with toasted almonds. Serves 4.
